Our hens produce a lot in the summer and stop in the winter. I heard about a method that can preserve eggs for up to two years, using pickling lime. It's very simple. You mix pickling lime into water (doesn't even have to be hot water) and pour it over unwashed eggs in a wide-mouthed jar. I couldn't find pickling lime on store shelves, so I ordered this. It is enough to preserve many eggs.According to the Internet, using pickling lime when you are making cucumber pickles can cause botulism. That's because the alkaline nature of the lime cancels out the acid in the vinegar and reduces its antimicrobial properties.
