A good knife but with a few changes by Yoshihiro it could be a great knife...just not there yet
I give this knife 3 stars because while the blade and steel, especially the Super Blue steel are wonderful and beautifully sharp, over all the knife could be even be better. What would make this knife better? Firstly, a completely full tang. The balance is off just a bit making it a little too light. Secondly, where the bolster meets the handle is a little rough: Not a a nice smooth transition. That can be very annoying and makes it feel cheaper than it should. Thirdly, the heel needs to smoothed a bit at the edge. And fourthly, and probably most significantly, the handle is too thin. I do not have the largest hands in the world and yet the handle needs to be thicker. That too would help with the balance. The blade I like better than my Shun Premier santoku, but the handle on my Shun is FAR better. The saya is though a nice convenience. Yes I am picky, but I use a knife for cooking every day. So far the blade retention appears to be quite good.

Good Knife, scary QC
the hagane, hard steel core was eventually exposed, it isn't supposed to be exposed because the amazon page claims it is layered in a warikomi pattern while the core should only be exposed on the back in a san-mai pattern.. my guess is the blade was originally forged a bit too flat and when it was profile-ground the hagane popped out the back.. it shouldn't be a huge issue as long as it doesn't start to delaminate but I would at least let the people who made it know about the QC issue. (This is from a blade smith who looked at the blade.)

Great knife for kitchen work
I work in kitchens and this knife is great. Its very sharp and has a great feel to it. Many of our dishes are small plates and require intricate cuts and precision, and this knife is more than capable of doing that. Plus the included cover is pretty cool looking and does a great job of keeping the blade safe, as long as you keep up this the plastic plug it will never slide off your blade like some cheap blade guards.

Just got it..Excellent Knife!I was trying to cancel the purchase and buy more expensive Yoshihiro knife but it was too late.Now I'm very happy with this one.

a great knife. thin but very strong
a great knife. thin but very strong, good precision. i only sharpened it today for the first time (i am a full time chef in a japanese restaurant) after using it every day for 2-3 weeks. definitely will recommend. based on this, my next yanagi will likely be a yoshihiro as well.

It is not exactlty stain free.
The knife is very sharp, but leaves stains, also saya cover doesn't fit right.

im in love with this knife, I'm going to order another one at the end of this month, keeps its sharp well and the idea of having blue steal combined with stainless, has been so wonderful, the service was fast, and reliable,will come back again with Yoshihiro cutlery
